Application of laser particle size analyzer in maltitol

Maltitol, also known as hydrogenated maltose, is considered an alternative sweetener to sucrose. It is a carbohydrate naturally found in many fruits and vegetables. It appears as colorless and transparent crystals. It is easily soluble in water and insoluble in methanol and ethanol. Commercial maltitol is mainly produced from starch of cereals such as corn, wheat and potato. It is a sugar alcohol produced by hydrogenation of maltose obtained from starch.

Maltitol has many properties such as low calorie, non-cariogenicity, low glycemic, promotes calcium absorption, and basically does not produce Maillard reaction. It has been widely used in the food, chemical, health care products and cosmetics industries.

According to statistics, this "high-purity crystalline maltol" obtained by the applicant company usually has a particle size distribution by volume for an arithmetic mean particle diameter comprised between 180 and 230 μm, and the particle size distribution is characterized by :

--more than 20% of particles with a size smaller than 200 μm,

--more than 7% of particles with a size less than 100 μm,

- More than 2% of particles with a size smaller than 40 μm (these measurements are determined by laser granulometry, as will be explained below).

This product is also marketed by the applicant company under the trade name MALTISORBP200.

In the specific case of maltol, the Applicant Company has also discovered that the presence of fine particles of crystalline maltol (measuring less than 200 μm, more particularly less than 100 μm and even more particularly less than 40 μm) may appear to be detrimental to the manufacture of said tabletop sweetener The conditions are harmful.

It was also noted that the higher the concentration of branched maltodextrin, the less likely the crystalline maltol powder will be to agglomerate if it is enriched with particles having a fine size.
